Recipe: "Anything Goes" Frittata

It's the end of the week, there's not much left in the fridge or cupboard but a few staples and random veggies. What to make for lunch? This week I had the brilliant idea to combine the bits and pieces I found into a fabulous frittata! And the great thing about this recipe is - Anything Goes! You can get creative with whatever veg / meat / cheese / herbs you have on hand. Below is the recipe I put together, plus a list of other ingredients you could try - have a fridge clean out and feel free to tag @pinelime.designco with your creations!

"Anything Goes" Frittata with potato, capsicum & feta
Serves 4
You will need:
8 eggs
1/3 cup milk
1 tsp Vegeta stock powder (or chicken stock powder)
A few cracks of black pepper
1 tbsp extra virgin olive oil
2 small potatoes, diced
2-3 left-over burger patties, diced
1 small red capsicum, diced
2 spring onions, sliced thinly
1/3 cup crumbled feta cheese
4-5 fresh basil leaves
Method:
Crack the eggs into a large bowl and whisk. Add the milk, stock powder and pepper, mix well.
Heat a frying pan over a medium-low heat, add the olive oil. Once at temperature, toss in the diced potato and gently fry until tender. Gradually add a few splashes of water (if needed) to aid in softening the potato, and cover with a lid or foil to prevent drying out.
Once potato is mostly cooked through, add the capsicum, spring onions and meat. Cook on medium-low heat until the veg is soft, about 4-5 minutes.
Pour the egg mixture over the toppings in the pan, turn heat to low, cover and cook gently until egg is almost cooked through.
Sprinkle the feta and basil leaves over the top, then turn off the heat and cover for 2-3 minutes, allowing the residual heat to finish cooking the egg through.
Once egg is set all the way through, it's ready to slice and serve! Use a metal spatula to cut into quarters and lift out the slices onto a plate. Serve with a piece of toasted sourdough, some salad leaves or just on it's own!
